The Winemaker’s corner<\/h4>\n

Limestone riverbed dating from Pliocene.<\/p>\n

The soil is made up of angular stones and siliceous pebbles from the Montagne Noire.<\/p>\n

Old vines planted on hills facing south.<\/p>\n

The first grape selection is made on the bunches. The grapes are selected and harvested only when over ripped. Carbonic chilled maceration of the varietals begins separately before fermentation at a controlled temperature range of 26-30\u00b0, with daily pumping over during 15 days.<\/p>\n
