A delicate toasted aroma is also noticeable.<\/p>\n<p>On the palate, the fresh red fruit and confectionery aromas are captivating. Thanks to the morning freshness during harvest, we are able to preserve the juice from oxidation. In addition, the vibrant must allows us to recover the first juice and cool it immediately. We then proceed with direct maceration in the press under inert gas and gentle pressing. The must is then cold-settled before fermentation at low temperature. After fermentation, we blend the wine and place a portion of the blend in 400-liter new French oak barrels. Finally, we perform b\u00e2tonnage every 10-12 days to enhance the aromatic complexity and structure of the wine.<\/p>\n<p><strong>Aging:<\/strong> Aged in new French oak barrels for 4-6 months for 100% of the cuv\u00e9e.<\/p>\n<p>For the delicate aging of the PALMA cuv\u00e9e, we specifically chose to work with the &#8220;Perle Blanche&#8221; barrel from Nadali\u00e9. This barrel is crafted from centennial oak trees from the forests in central France.
