Soil: Clay-limestone, from the Bois vineyard.<\/p>\n

The 2021 vintage was harvested on August 20th, at full ripeness. They grapes are first destemmed, then crushed and placed in a vat with their skins and seeds. And the skin contact maceration lasts for 10 days at a temperature of 20\u00b0C. A gentle extraction takes place before pressing. The wine then undergoes malolactic fermentation and is left to rest for several weeks. Pre-bottling filtration follows.<\/p>\n

WHITE MACERATION WINE<\/strong><\/p>\n

Cellaring potential: 3 to 5 years. An interesting feature of orange wine is that it ages very pleasantly; its texture becomes even more enveloping, and its aromas grow more complex over time.<\/p>\n
