Fluvial deposits dating back to the Pliocene.<\/p>\n

The two grape varieties are harvested separately based on ripeness and tasting evaluations. The cool morning temperatures during harvest help preserve the juices from oxidation right from the start of vinification. Direct maceration in an inert gas press is followed by gentle pressing. The must is then cold-settled before fermenting at a low temperature (15\u00baC) to retain all its aromas.<\/p>\n
