The winemaker’s corner<\/span><\/h4>\n

The two grape varieties are harvested separately according to their ripeness. They are then destemmed and put into fermentation. A gentle and qualitative extraction takes place during the daily pumpovers at controlled temperature. A tasting every day helps define the end of the post-fermentation maceration. The blending is done at the end of fermentation. Aging takes place in concrete tanks.<\/p>\n
