NEW VINTAGE 2023<\/strong><\/p>\n Les Nuits de Paraza is the new cuv\u00e9e from Ch\u00e2teau de Paraza. An intense yet smooth, fresh, and enticing blend of Merlot and Cabernet Franc. It\u2019s a beautifully balanced wine distinguished by its freshness, silky tannins, and velvety texture. It\u2019s made without added sulfites for a more vibrant, natural taste.<\/p>\n <\/p>\n Grape Varieties<\/strong><\/p>\n 70% Cabernet Franc \u2013 30% Merlot<\/p>\n <\/p>\n Tasting Notes<\/strong><\/p>\n A ruby color with violet hues.<\/p>\n The nose is clean and expressive, with notes of black fruits, the palate is smooth and fresh, offering a pure expression of Merlot and Cabernet Franc aromas with silky tannins.<\/p>\n <\/p>\n Serving Temperature<\/strong><\/p>\n 16-18\u00b0C<\/p>\n <\/p>\n Food Pairing<\/strong><\/p>\n The smooth character of Les Nuits de Paraza makes it an easy-to-drink wine that pairs well with many dishes. It complements barbecues, pizzas, and cheese platters effortlessly. It also pairs beautifully with dishes like broad beans with bacon or lamb kefta with yogurt and mint sauce.<\/p>\n <\/p>\n The Winemaker’s Corner<\/strong><\/p>\n The soils are calcareous marshlands dating from the Tertiary period, with Pliocene alluvial deposits featuring silica pebbles from the Montagne Noire.<\/p>\n We work on a parcel-by-parcel basis, by grape variety, with the goal of finding a beautiful balance between Merlot and Cabernet Franc vines.<\/p>\n First, we harvest the two varieties separately, according to their maturity and based on tastings. They are then destemmed and placed into fermentation. A gentle and qualitative extraction process takes place, with minimal handling. Daily tastings of the different vats help determine the end of the post-fermentation maceration. The wine is then filtered using tangential filtration, a process involving a very fine filter and sterile filtration. This helps eliminate certain microorganisms, such as yeasts, and further protects the wine. To ensure a wine full of freshness, we did not add any sulfites during the vinification or bottling process.<\/p>\n <\/p>\n
